If you're at VBC there was a Turkish joint that opened not far from the Palace that had some decent Hummus and fresh brick oven baked pita style bread for $3 I think. Good stuff. |

Make it at home, can of chick peas, spoonful of chopped garlic, some olive oil, salt, and spin it up in the food processor.
Saves a bunch of money, and you can add whatever additives you want. SO far I've made regular, jalapeno hummus, tabasco hummus, and sriracha hummus.

Way cheaper to make it yourself after you buy the Tahini and olive oil which are the only expensive ingredients.
1 Can Chickpeas/Garbonzo 3 Tbsp Tahini 3 Tbsp Lemon juice 3 Tbsp Olive Oil couple of Fresh Garlic cloves couple ts of salt Blender *not exact measurements but around there. |

I'm not in Iraq or Afghanistan. I'm somewhere in between. Hummus will have to wait a couple of weeks, I'm afraid, but it will still be damn tasty! |
So cheap and easy to make with just a few ingredients I don't know why people buy the overpriced crap in the tubs. A food processor works best. I usually double or triple this recipe for parties.
Preparation:Drainchickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth. Place in serving bowl, and create a shallow well in the center of the hummus. |

I make my own. I used to put all the ingredients in at once and then wondered why my hummus wasn't all light and smooth and creamy like packaged hummus and why water would separate out of my hummus. It's because properly made hummus is an emulsion, like mayonnaise or hollandaise. You mix the ingredients in 3 stages: 1st stage 1 lb cooked chickpeas 2 cloves mined garlic 1/3 cup tahini blend 2nd stage 1/4 cup water 5 tbsp lemon juice 1.5 tsp salt 2 tsp cumin blend 3rd stage drizzle in 1/4 cup extra virgin olive oil as it's blending |
