I'd like to make a bunch and start keeping it on hand for seasoning things.

I have never made it but Alton Brown says it will last up to 6 months in an airtight container.

Keep the extra in the freezer and it will last a long time. Only take out what you will use in a couple weeks.

Vacuum seal it in a jar with an oxygen absorber and forget it.
