Sorry to bring up a common topic, but I came across a great recipe for fried chicken in Country Living magazine:
Brine:
6 C buttermilk
.5 C kosher salt
4 T sugar
3 t garam masala
2 t ground coriander
2 t ground peppercorn
1 t ground ginger
1 t paprika
.5 t cayenne
Dredge:
~ 3.5-4 lb chicken
canola oil (looking at changing to peanut oil –– canola was... off...)
4 C all-purpose flour
4 t ground coriander
4 t garam masala
4 t ground peppercorn
2 t ground tumeric
1 t kosher salt
.5 t cayenne
I absolutely love this chicken - adults said they LOVED it and picky children were lined up for seconds. Anybody have any great recipes for fried chicken?
