I need very preliminary budgetary figures on how much concrete I will need.

This pad will have a 60x40 metal building that will carry at most a 100 hp tractor or an F-350.
An awning 20 feet deep that runs the length of one of the 60 ft sides.
A pad on the back side that is 26 ft by 60 feet.

This means that the pad could be 60x86 ft or slightly larger.

The back side will hold two 24 ft diameter ~7.5 ft high water tanks.

I have a few questions now.

Is the thickness of the concrete determined by the maximum psi load that the concrete will carry?
How thick should the slab be not counting columns and edges?
How many yards will this monster need (roughly) if the slope is about 1 ft drop for every 20 feet but can be graded to reduce the slope.

No expert but this will depend on the sub-base as well.

Call a local concrete store and they can give you some estimates. There will also be some beams figured in there also.
