I don't know about dogfighting, but if you want a realistic one, with an unlimited selection of planes, check out X-Plane.  You can design your own, or just search on-line and download someone elses.  This is by far the best simulator I've tried.

Dog fight?  You need a good combat sim.  Depends on what era you're wanting.

For regular civilian flight, I prefer Microsoft Flight Simulator, but only because it has the best visuals and plenty of vendors who design accurate add ons to enhance it's realism.  The only real fault of MSFS is the flight dynamics, however, considering it's a PC game, it's better than X-Plane IMO.

Ace Combat 5: Unsung Heroes for the PS2 was pretty damn cool.

What kind of planes do you want to fly?  WWII birds?  Modern jets?

Falcon 4 is still god.

I have to go apeshit-nuts on full-aft trim & hold full back-pressure on my CH Products yoke to almost stall the Cessna 172 in a power-off stall in MSFS 2002 & 2004.

Yesterday, I had neutral trim and a couple of inches of yoke travel left over when I stalled a Cessna 172N over one my flight school's "play areas".

The graphics sure are pretty, though.

80 missiles per jet isn't what I think he is looking for...

Well, the FDEs can be "programmed" to stall and spin very well.  Unfortunately, only one or two vendors actually model this in their planes.  The most popular is RealAir.  www.realairsimulations.com/  RealAir has a free upgrade to the default Cessna and it's FDE is improved to allow stalls and spins.  Plus their payware products are top-notch.

Falcon: Allied Force is quite realisitic in simming the inner & outer workings of the F-16.  Highly Recommended!
