In an effort to show the heathens who put beans,pasta,corn,rice,and all manner of other bullshit in chilli the error of their way I present Hog chilli .



How to make Texas Hog Chilli

Get hogs




Clean hogs



Set up 15 gallon pot



Cook bacon



Add onions



Sweat onions



Chop garlic



Add garlic



Cook some more



Add 25 pounds chilli ground hog



Cook



Till dry grey



Add salt and pepper



Add chilli powder,oregano,paprika,cumin,



Add tomato sauce  a not needed sacrilege



Add beef stock



Stem seed and re hydrate dried peppers



Boat motor peppers till smooth



Add peppers



Add flour masa mixture and cook 30 or more minutes



Serve without chips crackers or cheese as this is not needed with good chilli



Make various dinner pics







Start shit storm over beans no beans

We ground two of those pigs into 57 pounds of chilli.  Will get pics next time

Wild hog is lean so I cooked about 2.5 pounds of bacon ends and pieces to have some fat for the onions to cook with

Do you Texans even put saltines or sour cream or cheese of some kind in your (chili) once it goes in your bowl ?  This is a serious question, all these Texan chili pics just look like a bowl of meat sauce(still look tasty).  Is it taboo to add other things besides just the meat, sauce , and veggies.  Just wondering what the official rules of Texas chili are.

We have had two 25 pound + batches of chilli at our shop and yes we put everyting in it after its cooked.   But once you add beans it is no longer chilli.  The guys at the shop like cheese and fritos and I did have 4 gallons of beans there but thats another dinner pic.   I wanted to make chilli that needed no other adders to make it edible and  as I watched the guys go back for their third and fourth bowls and start eating it without chips and cheese i realized I had done what i set out to do.

Sure , it's Ok to add anything you want including beans , the problem is people won't come to face the facts that ORIGINALLY Chili was not made with beans , they were used as a filler , but uneducated people on the subject want to argue that it isn't Chili unless it has beans , we know that it is Chili before beans are added and it's Chili WITH beans after the fact

It does look good, but yes, I like it with beans, too.





Never let anyone else dictate the terms of your happiness to you.  



If you like beans in your chili,  you like beans in your chili.  If you prefer it without beans, that's the way you like it.   Either way, you're not wrong.



Make it the way YOU like it.  If that means tossing live rats into the pot,  go for it...but I reserve the right to not eat whole rat chili.

BTW, the food looks great.



In the late 70's early 80's the m-16 were cheap and I just did not want to go through the process  to get one and boy was that a mistake.  I bought 3 lowers last weekend and I know our county sheriff and I think he will sign for me but if I did I would build another and go for the can too.  I have always wanted a ruger 22 pistol with the integral can so maybe this will be the year.. The pistol lower was bought before the great one became president and built mainly in his honor because we still can .  So I will keep it just to piss off liberals

These pigs make great chilli .  We added some beef to one pot just to add flavor and a different texture and it took away from the pig meat. We had about 2.5 gallons left and some of the men asked if they could take some home so it must be good.
