I decided to make use of my pasta excellence kit again and also post a Chicken Carbonara recipe.
First up is the pasta. I'm using my Kitchen Aid stand mixer with the Pasta Excellence kit. This time I'm using two attachments, the pasta roller and the angel hair pasta cutter.
Ingredients for the pasta
Ingredients together:
1 egg for every 3/4 cup flour. I break down the 3/4 cup by 1/4 regular flour and 1/2 semolina flour.
This time it was:
3 eggs
1 1/2 cup semolina flour
3/4 cup flour
Then turn the mixer on stir for a few minutes to get the eggs to incorporate with the flour. You might need to add a bit of water and press together by hand. Add a little water at a time otherwise you'll have to add flour. Then turn up the speed to 2 and let it knead for 5-10 minutes. After it's done cover and let sit for 20-30 minutes.
Cut off small section of dough, about the size of tennis ball or smaller.
Attach the roller attachment,
Roll out the small piece of dough on setting 1. Keep increasing the number until you get to 7. You may need to add flour to the sheets if they start to rip or crack. If that is the case, fold into thirds and run through the roller a few more times at the setting it was on and then keep progressing.
Attach the cutter and run the sheet through.
Roll into bird's nests and place on a tray or whatever you want. I'm freezing a bunch of this.
Boil fresh pasta for 3-4 minutes. Frozen is the same.
For the chicken either frozen or raw. Take and inch or two of water in the bottom of a crockpot and add chicken bullion. Cook on high for 3 hours.
After your chicken is cooked. Shred it with 2 forks.
Ingredients for the sauce
Not picture is heavy cream and shredded parmesan cheese.
Cut up bacon and cook
Heat heavy cream I used about half a cup, you will use an equal amount of cheese
After bacon has cooked remove from heat and drain fat until you have about two tablespoons remaining. Add peas and onion.
Cook the peas and onion. While cooking add the cheese to the heavy cream and stir together.
Add chicken and bacon back to the peas and onion once cooked.
Pour cream and cheese on top and stir together.
Cook pasta and plate.
