I was too busy feasting and had one too many beers in the celebratory reflection period to post in real time, so as I have my morning coffee I will attempt to make you all hungry.
It all started last winter..... 
Random assorted pig parts that were left in the freezer, covered in a home made rub. 
Smoker is ready to roll. I adjust it to 180-190 after the meat is in. 
Many hours into the process. 
Awww crap I forgot about the venison.....Just kidding. Thought I would try something I saw on a sandwich show one hungover Sunday. Stuffed burgers Some fairly thin patties dusted lightly with season salt to start 
Ask everyone what type of cheese they want and whether they want garden fresh jalepenos as well 
Apply top patty 
Pull my pork while the burgers are cooking 
Retrieve the aformentioned burgers from the grill. Oops one of them is leaking cheese. 
Serve with a tasty beverage and some home made slaw on the side (I like to add it to my pork bite by bite) 
Sit by the fire and let the digestion begin.

Details on the artillery? ETA: Just noticed the Blue Moon. That's pretty good beer. Has a very citrus-y taste. In order of their appearance. Stag lower with hodgepodged upper shooting 62gr Nosler partitions, 870 with a rifled/ported slug barrel shooting accutips, Glock 21. The Blue Moon went REALLY well with pork, but on its own it needs work. It was between that or Lite by the time I was done slaving in the kitchen all day 
I was really digging through the bottom of the beer fridge for one last bottle of Shock Top end of the world ale. Not because it tastes good, but because it fits the theme much better. |
