Temps are supposed to drop into single digits tonight, so I thought I'd make soup for dinner. Turkey noodle soup, to be exact, to use up the last of the T'giving bird. I always make cornbread to go with my homemade soups, but discovered that I was out of corn meal! What to do? Necessity being the mother of invention, I used a cup of masa (corn flour) along with the other usual ingredients. The masa is basically the same as corn meal, just more finely divided. The batter turned out a bit stiffer than usual, so I added a splash or two more milk, and put it in a sizzlin' hot cast iron skillet with a few spoons of oil in the bottom. It actually turned out great! And no, I don't make sweet corn bread. So there.
Oh, the soup––I did my usual turkey noodle, as mentioned, with onion, garlic, carrot and celery, along with two bay leaves, but tried something different––I defrosted my last bag of Pueblo Hot green chiles (pre roasted and peeled), and put three in the soup, along with a tsp of cumin. it rocked! |
