Seriously how hard is this? I cook breakfast all the time I think I am going to open my own shop and start selling it. 5 bucks for a couple of eggs and hash browns? That would only cost like 1 buck if I buy in bulk and I can bang that out in no time.

Of course I would have to buy a stove and a fridge, not that expensive. Then just fire up the stove and start making breakfast just like I do for myself. Even better since I want to open a breakfast joint I don't have to be open all day. |

Then I became acquainted with my city's food serving regulation & permitting regulations. First you have to take time off work to take a test that allows you to work with food that comes in contact with the public. Then once you have that permit, you must prepare your food in a permitted and inspected kitchen. Your kitchen is not one of these. You need to find one that allows you to cook in their facility. Done all that? Good! Next, you have to serve your food at certain temperatures, have handwashing station, fire extinguisher, etc where you actually intend to serve your food. Anyone working in your food serving station needs a permit to work with food as well. |
Location, licenses, insurance, utilities, cooking equipment, fridge/freezer, utensils, dishes, seating, cleaning supplies, POS system, credit card merchant account(they need their cut), payroll (since it will be about impossible to cook, bus, take orders and collect money all by yourself), etc, etc, etc. Then figure your prep time, several hours before opening and then your clean-up time, couple of hours after closing. Owning/managing/cooking at a restaurant sounds about like 16 hour days for minimum wage if you are successful. I always dreamed about it too

Well, among many other things, the cost for me to buy and cook my breakfast does not factor in the half a dozen permits, licenses and assorted government permissions I would need to sell breakfast to others.
(In my city it is 18 in total if you want to sell booze with the food, which is kinda expected here, once you include all city, state, and federal permission slips.) Yay "free" markets. ETA: I am extremely close friends with the owners of three restaurants, and good friends with the owners of two others and with four bar owners, one of whom also owns a restaurant. I do not envy them in the slightest. (Well, except maybe Ganesh when I was single. That dude just straight up falls into so much tail it ain't even funny. Works his behind off though.) |

What are the stats on success/failure with restaurants? Now I figure a food truck would make $$$$ in my area, selling breakfast and lunch at our shop and others in the area. |

My wife and I single-handedly keep the one in Estes Park open when we visit.

Anyway, I went to culinary school and my instructor basically did everything in his power to talk us out of opening our own place...lol. The Ansul system was mentioned as part of operating costs, over head, linen service, pest control, etc. One sick customer shuts you down...it's a hairy business. We were also told that you need to figure out what your expenses will be for 1 year and have that x2 in the bank if you want to succeed. To the OP I suggest you find a place similar to what you would like to open and ask the owner if you could work there for free on your weekend mornings. Do that for few weeks to see what you're getting yourself into. |
