Now I'm a total noob when it comes to cooking beans.  I've had my beans soaking since 11pm, now my wife unit wants to go out to eat tonight.  Even though if I pitch the beans out, I'm out like $1.50, I'd rather just save them and cook them tomorrow.



Is it ok to soak beans for 48 hours or will they be ruined?

I don't know but whatever you do don't say anything about putting them in CHILI...OR WE'RE OFF.

should be ok, but why not cook them now?
I frequently make beans a day ahead of when i want to serve them. (So 1 night / day soaking, then cook, then fridge and reheat for the next day)

When cooking beans I actually let mine soak for 2-3 days.  There will be some bubbles on top, with a yeasty odor, but just rinse them off and you'll be good to go.  In fact, when you soak them longer, it supposedly breaks down whatever it is in beans that makes you gassy.  Could be true since doing long soaks, my chili (yes, I put beans in me chili and I don't care TX arfcommers) doesn't give me any gas.

They are fine dude.

cook them now, put in fridge, then re-heat even better

in 48 hrs they will more than likely sprout, if you put in fridge they prob wont

I can't cook them now because I'm lacking several ingredients.  I need an onion and some ham hocks.

As long as they are kept cold, sprouting will be delayed.  You should be fine.

huh?

I cook beans about twice a month and will commonly let them soak for 3 days.  Only time I've seen sprouting was when I let a batch go for 4 days, unrefrigerated.

Let them soak. Even if they sprout they are good to eat.
