Do not belong in chili.
Now that that's out of the way what are your killer recipes for a good pot of beans? I usually stick to pintos or red beans since they're a side dish. But I'd like to hear any recipes or tips for any kind. 1 lb pintos, rinsed and soaked over night 1/2 diced white onion minced garlic, as much as it takes 1 tbsp tomato paste 1or 2 ham hocks, scored 1 can chipotle peppers with the adobo 1 can or box sodium free chicken stock water beer Sautee onions and garlic in olive oil until translucent. Add a pinch of kosher salt. Add tomato paste and roughly chopped chipotles and stir for a couple of minutes. Add the drained beans and stir for a minute or two. Add the chicken stock and enough water to cover the beans by an inch. Add the ham hocks. Bring to a rolling boil for a minute or so, lower to a simmer and loosely cover the pot Check and give a stir every half hour. Add some beer if the liquid is low. Shiner Bock is good. Add salt to taste when they're getting close to done. |

I like Thermos-cooking Pinto beans, because it only requires a few minutes of cooking - Very useful for conserving stove fuel in a pinch, and doesn't require much attention after they're started.
For a 1.1 quart (35 oz) Stanley Thermos bottle: 1. Wash & pre-soak 1-1/4 cups of pinto beans overnight. 2. Discard soak water. 3. Add approx. 12 oz water (or beer), 2 tsp. of Bolner's Fiesta Pinto Bean Seasoning, several ounces of canned ham or a few strips of bacon, and a 10 oz can of diced tomatoes. 4. Heat mixture to a boil for approx. 5 minutes. 5. While the beans are heating, pre-heat your Thermos bottle by pouring in a few ounces of boiling water - Cap it and let stand for a few minutes before pouring the water out. 6. Immediately add the pinto beans to the hot Thermos, cap it, and let it set on it side for 6-8 hours (helps distribute heat more evenly than sitting upright). Shake it every few hours to stir contents. 7. Add salt to taste before serving. (Note: Do not add salt during cooking - It hinders bean softening). Tastes great over rice (which is also easy to cook with a Thermos bottle). |

Fact No, beans deserve to stand alone as an awesome side dish, even a main dish, and they are wasted when used to adulterate chili. Great beans as a side dish to a bowl of red is perfection. |
