How many cubic inches would I need for a weekend hike if my wife carried a smaller pack that is about 2000 cubic inches?

I don't think anyone can tell you.  In my experience, the size and weight of a weekend load varies wildly from person to person (based in large part on experience) and from trip to trip (depending on the planned activiities, expected weather conditions and the like) . . .

Depends on how much crap yu want to carry and what the conditions are.

Since you are new to backpacking, and you're traveling with a chick, you're going to carry way too much shit, so get a huge pack.

Depends on what sort of gear you're carrying.  I'm assuming you're on the not-ultralight side of the spectrum.  In the end, you'll need just about as much gear for a weekend trip as you will for a full week--you'd just carry more food for the week-long trip.  You'll probably need 3000-4000 cubic inches.  Personally, I'd lean toward the larger end of the spectrum.

Yeah she thinks we have to have a tent. I plan on leaving the metal stakes out and only take enough poles to hold the roof up.
