I cooked these baby back ribs a couple of weeks ago and thought I'd share... pics. Sorry, but if you were here I'd share the ribs too. [:)] I cut 3 slabs into squares with 3 or 4 ribs each piece. Light a fire on one side... ribs go on the other side. Cook on low indirect heat - about 150 degrees - for around 4 hours. Here's when they first went on the grill. No sauce, only a homemade rub.

The smoker box went under the grate next to the fire and released smoke slowly. I throw some wet mesquite wood chips in there every hour or so to make some quick smoke. Here the ribs have cooked about an hour just before I turned them.

And I think this is after about 3 hours cooking time.

And they're done! Tender and juicy and the meat practically falls off the bone. Served with BBQ sauce on the table, grilled corn on the cob, red potato salad, veggie packets, and salad.
