Pig or Cow?

Go.

ETA: I'm all about snagging a pound of extra-lean brisket from Rudy's with half a loaf of bread. If you're not from Texas, you wouldn't get it.

If by BBQ you mean grilled meat I prefer beef. If however you mean the southern US definition of BBQ as slow cooked/smoked meat I prefer pork.

There is a small BBQ place just across the state line in Ky that makes the best BBQ I've ever had. Never had anything like it.

I don't go to Rudy's - there are better places further away from the beaten paths, but I understand.

That said, my father cooked competition BBW (briskets - other stuff is just grilled or smoked - Brisket is BBQed.  So sayest the Church of the Holy Brisket, so sayest we all) long enough to make me appreciate BBQ Pork Butt Steak  You don't want to imaging the number of practice briskets we ate - but pork butt was a treat (and I am not talking about pulled pork that is swimming in sauce either, but a 1 1/2 steak that leaves your beard greasy from the drippings.

Oh, and for what it's worth - I make my own sausage - so am also very found of the "appetizers" that go waiting for the low and slow.  I really need to smoke some sweatbread again - face dripping good.

BBQ Brisket FTW.  One thing that I dislike about Virginia is that brisket does not seem to be as popular around here, which is a shame.

Didn't realize there was anything other than cow BBQ until I moved to VA for school. Pulled pork is some good stuff but it's not quite the same. First thing I do everytime I visit home is grab some brisket and some decent Mexican food.

I think pork is way better.

Beef isn't as tasty, and I don't like the fat.

With Pork the fat isn't an issue, the meat is more tender, and I think it tastes better.

I'll take pork.

It's tastier, imo, and alot harder to screw up cooking then beef.

Beef does have a better texture on certain cuts though.

the correct answer.

BBQ is a cooking method that is independent of the meat used.  But at least here in the Memphis area, pork is the meat of choice so that is what I chose in the poll.
