I just finished defleshing the carcass and put a big pot of bones and the miscellaneous bits on the stove to make soup stock. I'll have the turkey and fixin's several more times, until I'm sick of it, then move on to turkey sandwiches, turkey noodle soup (yum!), and perhaps my favorite, turkey burritos with green chile. Got any favorite turkey leftover dishes to share?

I love turkey but I can only take so much of it in a short amount of time. We only cook turkeys big enough to eat on T'day and then one round of leftovers.. Turkey sammiches is usually wht we do.

A traditional family dish called Narrow Gauges, basically an open face turkey sandwich.
Layered like so.... Toasted bread Turkey Bacon White Cream Sauce Asparagus A bunch of fresh parmesan cheese .... then browned under the oven broiler. |
