This thing is great but doesn't get used often. Takes a while to pre-heat and it is hard to find a place to set it while you flip stuff. I don't like all of my sandwiches squished, but for like a thick Reuben that is never going to heat up inside just laying on the pan without burning the bread it rocks. I've worked on all of my lodges a little but that one's is rougher than I ever recall mine.

That’s a lodge?!? Even if you cleaned it up a bit, it’s still leagues away from my junk quality. My pan looks like it was cast out of a pea gravel mould.

Ok, mr. easy cheese. There was a slice of mozzarella in there too.

My cheese options are limited: mozzarella, queso fresco, cotija, cheddar, white American, or pepper jack. I was wanting a mozzarella/American mix. Tastes great.

I'm an old time carbon steel snob, but i needed a small stainless fixed blade knife to fix to my fishing kayak vest. Saw this little "neck knife" made by Cold Steel. It does not arrive razor sharp, so it had a date with whetstones.

Never sharpened a stainless like this thing. It resisted the whetstone like a high carbon steel. Noticed "AUS 8A" stamped on the blade. Research online showed that steel is produced in Japan. I'm not recommending this particular knife, but i am recommending anything with this AUS 8A steel.

Yeah, but that one is ~25 years old. Looking mine over they seem to have been made better then, but it has also had by far the most use. For comparison, the Wok is probably ~15YO, and the little one is new issue. I sanded all of them a bit, but just by hand.

The wok is a beast - it has a really thick column at the bottom for a base. Probably weighs double the old skillet. I hadn't been using it for a while but recently it became the go-to for crack-slaw.

My brother gave it to us (well, me, wife can't even lift it) for Christmas. At first I didn't know what to think, but it has the mass heat effect for sure and there is a lot of room to work with.
