Variation between guns and ammo is huge... the only way to know is to test YOUR chosen load in YOUR shotgun. As for choke, generally buckshot gives the tightest patterns with moderate choke, like IC or modified at most... full choke can actually blow the pattern completely.

Conventional wisdom is that a modified choke will give the best results with 00 Buck. However Federal Flight Control actually works better in a cyl bore than a mod.
