I have never reloaded any rifle brass so this is new to me. As I have decapped and resized, I have found that in my LC brass only about 1/5 needs to be trimmed.  However, all of the commercial brass needs to be trimmed.

Would this be due to case thickness on the LC or should I group the brass by mfr. and decap and resize specifically to each mfr.?

Some cases will need to be trimmed, some won't, just how it worked out.

I sort my brass by headstamp, Lot of others do not. It's up to you.

Blasting ammo, don't bother to sort.

If you want accuracy, sort by headstamp.

Trim all cases to 1.750 and debur inside and out. (case neck)

Assuming they started life as "once fired." And, you're loading just shooting ammo.  You could seperate them by mfn. and additionally, by year or lot# (if you can find the info).

From then on, treat them and shoot them as a lot.  Take a small sample and measure it.   IF one case needed trimming......well then, trim the whole lot.  The assumption is that the lot will need it, sooner or later anyway, since they are growing at the same rate (or close enough to it).

Otherwise, you'll be measuring each case individually.
