My safe is about 50 sq ft inside....I use a large goldenrod which I think covers about 200 sq feet.  During Jan through March I have been getting about an average humidity reading of 37%....now that the weather is heating up I'm showing about an average humidity reading of 48%...is that bad?  Why is it higher in the hotter months (I live in Southern California).  Shouldn't the lager goldenrod prevent this higher humidity?  If 48% is bad is guess I'll have to get an evadry as well.

I would consider 48% to be pretty low.
goldenrods will NOT change the humidity in the safe, they make it less likely for moisture to condense onto the metal.  A goldenrod will not change humidity (ie. you may find humidity in the safe is same as outside the safe) but should still protect.

Some posts on here talk about TOO low humidity being bad for wooden stocks, but I think you would have to get pretty dry (I don't hear anyone from Arizona/Utah etc reporting that their stocks are all cracking).

I have 2 large Eva Dry's in my safe along with a golden rod.

Your safe is fine.  I've got a safe, and I was really concerned about humidity at first.  Mine runs 50-55% normally, which turns out to be what some museums use.  I've noted no bad smells, no rust, etc.
