What metal folder would be correct for a 1980 dated AK-74? Rolled edge or sharp edge? Or did they only ever make rolled edge folders?? TIA!

ORF is selling some take offs from Bulgarians... These would be correct.

Straight edged, smooth buttplate.

The one pictured in the May 1983 issue of SOF seems to be the sharp edged one.

The Russian rolled edges are later versions, the original AKS were always straight edges.  You should get straight edge if you want early 80s, and get rolled edge for late 80s.  The Russians went to AK74M polymer sidefolder in early 90s.

At what point did they switch from the 45 degree gas block to the 90?

No, the rolled edge is the Tula stock.. Izhmash stayed (and still makes them today) with a straight edge.

gas block changed in about 1976....

Russian AKS-74's are made by Izhmash, and never seen one with a ribbed buttplate, or rolled edges.  Tula and Izhmash made AKSU's, and the buttstocks on those are a different story, and I don't know that story.

I figured, with the 90 degree gas block I'd go with the shiny plumb pistol grip.
