Huge! I worked outside cooking meatballs, 3/4 cooked and into jars.
We did meat sauce and meatballs and sauce.


For the chicken, i just cut up raw breast into chunks, raw into jars, top w/water, 1/2 teaspoon kosher salt and can. (We didn't do broth incase the pups need emergency rations, no extra salt for them)

Ground hog ate mine down to the ground.  They never bothered them before,  next tear will put a rabbit fence aroung the bean trellis.  I gave been planting mostly foretex green beans for seceral years now.
Then had a seceral weeks long drought, so replanting wasn't an option.
Still have lots in freezer from last year or two.

Done, sauce and peppers.

The sauce turned out very sweet,and almost no acid

We do several different sauces depending on mood when making, also depends on availability of "non tomatoes" we have on hand.

Makes for a variety to choice from,

Some canning I did this weekend. Cowboy candy, pickled banana peppers, spaghetti sauce, tomatoes, corn and some lard I rendered. Pardon the messy room it got a little chaotic this weekend. Also dehydrated a bunch of peppers.

You guys have canned way more than me this year. Good to see people carrying on the tradition. In my neighborhood I’m the only one with a garden. People just don’t care anymore about being self reliant or independent of store bought goods. I got out of hunting in 2014. I’m getting back in the game this year.

How long do,you dry your peppers? 100% dry? Last ones I did I thought I got them dry, cooked and in bags they molded...

I use a excalibur 9 tray dehydrator. I will run the dehydrator run 10-12 hours.  You don’t hurt the peppers by letting the dehydrator run longer than necessary.  Right now I fill it up around 6 am and pull them at 6 pm.

I place them in a bowl to cool.  I then place them in quart jars. I just put a lid on, no o2 absorber or vacuum sealing it.  I’ve found that peppers store incredibly well with little effort. Just make sure they are in a dark dry room. I just opened a jar of jalapeños that were dehydrated in 2020 and they are just as crisp as the day I did it. I like to experiment and see how long something’s will last.  I have jars of chicken from 16 years ago and test one every two years, so far they are still good.

I have Jalapeños dehydrating right now.  

I make different spice blends with all the different peppers. Anything from just plain crushed red peppers to a blend of  chile peppers, Arbol, jalapeño, habanero, and ghost peppers.

Been freezing peas the last couple weeks. Should be canning green beans next week.  Also harvested the first potatoes of the year today.  This is the earliest I’ve ever harvested them before.  Planted Pontiac reds in March 1st, many people told me they wouldn’t grow that early up here.  But they handled a few frosts just fine and I should get a few hundred pounds of them.

Couple more weeks and it will be all hands on deck preserving the harvest.

Yup! Already eating white and purple tators, squash and zucchini out the wahoo. It's going to be a busy couple weeks a lot earlier than normal and we have had tons of rain.

Been growing and canning vegetables for about 25 years. It's a lost art for most people. I remember sitting on the front porch at my grandparents house, great grandparents house, etc, shelling and shucking when I was a kid with my brother and sisters. Good memories.

As an adult with a big backyard I decided to try my hand at growing and canning vegetables. It was hit or miss back then, but I guess I'm pretty good at it now. Started out water bathing, then got an old pressure canner donated by an elderly neighbor who liked my canned pickled crookneck squash lol. Kept him covered up with pickled squash til he passed, thank you and RIP Larry. Still use that pressure canner to this day.

The wife made some home canned pinto beans with cornbread the other day, delicious. I'm about to make my (humbly) famous marinara sauce with some canned tomatoes from our garden last year. The secret is anchovies. Shh. Don't tell anyone.

I really love this thread.  It's inspiring.

My little garden is not doing as well as I'd hoped this year.  I was wanting to do enough to put up quite a bit of food, but I didn't get the garden in until very late. It's twice the size of last year but still that's not much.  

Baby steps I guess.

I did get a Camp Chef stove to use as a canning stove on the back deck when I'm ready.  Got to get in the storage unit and get my mom's canners out.

Last fall I water bath canned some relish from a recipe I got off of "Celebrating Appalachia."  It was "Miss Betty's Overgrown Cucumber Sweet Relish"  or at least that's what I call it.  A way to use the ones that get ahead of you.

It's WONDERFUL. I eat it like salsa on tortilla chips.  I will try to make more of that if my cucumbers make.

Got lots of tomatoes coming on but none ripe yet, and a few green beans blooming.  My peppers aren't doing squat though.  Very disappointed in that.

Got some volunteer pie pumpkins I'm excited about.  

The rest will have to come from the farmer's market I reckon.

Trying to keep up with making medicine and also doing anything with the food garden is not easy.

I really admire how y'all work at it together as a couple..

I keep telling her she could teach a basic workshop, to keep traditions alive.

We will smoke jalapeños next weekend for candied jalapeños, peolpe love them.

Mine got hit again this year but I put up a bit of a barrier (7' t posts with 5 strands of ... white 1/8" rope) recently.  It seems to be helping.  They could jump it but there is not really a clear spot inside for them to land.  

We've enjoyed beans and cukes so far. Corn next and watermelons too.  If I kill the groundhog we may get some ripe tomatoes.
