The deer absolutely raw dogged my green beans this year.  I think we’ve gotten enough turkey craw for three meals out of twenty feet planted.  

OP, way easier to get dry beans from the store!   I shucked navy beans with my grandfather when I was a little kid.

While the above is true, easier is not always best.  The simple act of sitting and shelling beans has practical benefits.  It teaches children how to sit still, work, and be productive.  It allows the elderly to continue to be useful when they may not have the stamina to do much else.  It is a time for stories and the passing of practical knowledge.  It also teaches the children to work hard, fast and well so they can go play or swimming when they are done.  It teaches what is involved in the raising and processing of food.  It gives a real life example of the saying "waste not, want not".

That being said, I didn't like it as a boy either.  It was a lot more fun to take a 22 for a walk looking for squirrels.

Well, up and working on beans again...Beautiful morning, we watched sunrise drinking coffee.....just loaded dish washer. Hope to finish today....pulled and shelled this week

our shelling beans are no where near ready. We are just barely getting tomatoes.

ETA - looking at your pictures, you do it very different from us. We wait for the beans to dry out on the plants and then just shake them around. The beans fall to the bottom and the shells all fly away by fluffing them with your hands and finishing the final small stuff with a box fan.

Also, why do you can dry beans? For us the appeal is a long term keeper without all the fuss of canning. And when you cook them, you can add the ham hock or bacon that they really need.

Rabbits got my green beans, white beans and kidney beans. They didn't seem to like the cranberry beans or the black beans, which is what I plant the most of, so we will be fine in dry beans, but I am pissed about the green beans.

i do dry beans to amend the soil and as an exercise to get the seeds that have proven themselves in my climate and soil if they are ever truly needed.

Why?

We have many bags of dry beans we keep for long term storage.

These are everyday eating beans, not long term, altho they store great.

Instead of buying canned beans with God knows what's in them, in a few weeks we will do pintos and it will have ham and seasonings.

We do a couple hundred jars of pasta/pizza sauce, meat sauce and meatballs every year.

It is better food than walking down the canned Isle at a store in our opinion. Now if we mass cook for a party etc we will use store bought cans just because 90% of people wouldn't know or appreciate homegrown tomatoes sauce and beans.

I like apples and applesauce,apple chunks or sliced apples is so much better than delmonte or other brands when we can it, I can add cinnamon to my liking and the natural sugars are plenty w/o adding more bad sugar.

We will do romas next year, we are still eating 2013 romas beans on special accasions. And 2018 green beans.

Best part is we can add our own seasonings so she likes Cincinnati style chili so we can some of it also with her seasonings.

2750' in mountains with a high mountain to the west, that throws a shadow all up the hollers after 15:00 or 18:00 depending on where.

We have east/west and north/south garden areas depending on sun needs.

We have so much rain and humidity you can't dry on vines, we basically wait until 1/2 of the pods are really dry, (hard with rain) then the other ones are good, we only had to throw out maybe a cup of the white/bad little beans.

I was just wondering why so much canning when they keep so well in dry storage, but you seem to have quite the canning setup going. I agree that it is nice to have some ready to go. We just have a hard time finding enough time to do all that.

We can what needs it, like tomatoes and cucumbers, and freeze things like green beans, but try to keep as much as is as possible. We put winter squash, beets and carrots in dry storage so we don't have to worry about all that canning. (Carrots never do as well as we would like).

You said hundreds of cans of tomato sauce, etc. how many cans overall do you do? I would love to get quicker at canning to do those numbers.

We have a neighbor normally help or people we are showing how to do it, evruthing gets split up

We have 4 canners and 2 stoves the 3 or 4 of us are really efficient, we can knock out a run of 18 in about hr and 1/2, then it's every hour and more are ready. as 1 canner goes on we keep working and by the end of the afternoon 3 or 4 are going at the same time, we are cleaning up and just loading canners so there is always 1 or 2 ready to go.

We have seen folks who wait until the canner is done before being ready for the next step, we have jars lining the counters just waiting, the first 1/2 is the hardest and by afternoon, we are relaxing and feeding the canners

Every couple years we do 140#'s of sausage, that is a long 10 hr day, but we don't have to buy sausage for several years.

We will do a couple hundred tomato sauce here in the next month or so

This year we learned why we spend the time and effort to put up trellis for pole beans.

I was physically unable to this season, so planted Kentucky Wonder bush variety instead. Bending over to pick is a major PITA. We're getting enough to eat, but the All American is sitting on the shelf this season.

On the bright side, the tomatoes did well and we hot water bathed several dozen quarts.

All this.  

And the repetition of stories and such about the old times, about people, about what's happening with other people in the community....

It is a communion, and yes I mean with God too, but a communion between elders and young ones.   Like another poster above, I would give a lot to spend just one afternoon with my mom, grandmother, and aunt, breaking or shelling beans.  Just to feel them there with their steady, unchanging love and strength.

Plus, there is great value in knowing where your food comes from.  What's been sprayed on it, etc.

One part of this process that is forgotten, is saving food.

What do I mean by saving food?

All the pears are tree drops, they would of been rotten and wasted in another week. Neighbors tree is huge and ancient, without a bucket truck no access. Same with some peach trees.....that will be later

We just sat at the table peeling and cutting out bad spots, and bruising. So we can enjoy these over ice cream this winter ,or apple pie from all the apples we already did, alot of farms will let you get the "ugly fruit that scares consumers"

Works as good as it did 45 years ago.

I've got that same "tomato juicer" which is what my mom called it. I cannot even tell you how many hours I spent cranking that thing, backing it up, cranking it some more, to get every bit.

Wow...you just brought back some good memories.  

I hated that thing, honestly.  But I also loved it.

It is currently in the storage unit where all the stuff is from my mom and dad's home/farm.  Working toward cleaning that out.

We done the last tomatoes we plan to can yesterday. Also done the last of the peppers we’ll freeze.




Canned more chicken tonight.


But, this is what got my attention today. Look at the size of this sweet potato.

How do you do your chicken? We like to try different ways for different textures, yours looks perfect for "dumplings" the way my wife does it with egg noodles.

Wife cooks it in a large pot on the stove with water. Afterwards she’ll cut into pieces then shred with her hands. She does all that work. It’s my job to stuff the jars, add the broth, prep and pressure can it. We’ve used it with dumplings too.

I had planted 3 hills of sweet potatoes, finished digging them before it rained. Not a bad haul and the biggest taters I’ve ever seen or grown.
