Auguson and Honeyville have very different shelf life’s listed on there website for the same product. For freeze dried beef chunks in #10 cans,Auguson says 30yrs and Honeyville says 10-15 years. Why such a big difference for the same type of product? Is Honeyville just more conservative?

Who knows.....

I've seen FD beef chunks in #10 cans on other websites saying 25yr shelf life,
Mountain House FD Beef chunks in #10 cans says 30yr, same as Augason Farms.

Maybe the product is the same, but maybe the packaging isn't.
Could be different grade of #10 can, could be different type of atmosphere inside the can (nitrogen), could be a different liner in the can, could be different presence of oxy absorbers, etc.

I recently gave my buckets away so I can't be certain, but I remember it being a very low grade foil packets, not sure if mylar. It was kind of like the pouch of "cheese" in a kraft mac and cheese. My buckets were from 5 years ago. YMMV

Lentils I'm not sure about, we don't store those.
But I've read, dried lentils just packed in a bucket should be fine.

Wheat berries are fine just in the buckets, no Mylar needed
