What are you looking to have done, full custom, sight install?  How quick?  Nelson Ford is in Phoenix, a bunch of other great ones in different parts of the state. Chuck Rodgers, Don Williams.

Nelson ford does good work ,and im satisficed with the work he has done for me in the past . Nelson can have an attitude ,so don't question anything he says or does. That said Gary Reeder in Flagstaff is one of the best and his prices are really low for the quality of the work . IMHO it is worth a trip to Flagstaff and get Garry to do the work . Garry did a Dan Wesson 1911 for me 3 years ago ,and it is one of the best shooting 1911's I have ever shot .The trigger is  3lbs lite smooth  and breaks like glass with a short perfect reset.

The last time I went to have Nelson do some work for me he was so mellow I almost asked him what was wrong.

LOL, I thought Nelson was a gunsmith secret.  He doved-tailed a front sight on my Colt Commander and added a beavertail grip safety a few years ago.  His shop is 10 minutes from the house.

Gunsmith Inc, off 32nd Street north of Shea.

Another vote for Nelson Ford.  I've been a customer for over 20 years.  The attitude has mellowed quite a bit over the last decade or so, but he's still fun.  Be open to his advice.

If you have any Smith & Wesson or Ruger revolvers you should take them at the same time.  He also does fantastic work on Marlin lever guns.  Turnaround time for most work is 30-ish days but it will depend on what you want done.

Tell him that the guy he called from his bathroom last Saturday sent you.........

No doubt Nelson is the 1911 guy!
But tread carefully dealing with him.
DO NOT let him catch you staring at that thing growing outta his left shoulder.
Looks like a 2nd head........I swear last time 'it' winked at me!
