That's exactly what it is like. If I own a business I can make any number of requirements for entry into my store, so long as I'm not discriminating against a legally protected class.
They won't arrest you for you not wearing a mask or refusing to disclose your vaccination status. They'll arrest you for trespassing if you refuse to leave when asked because you won't follow their rules.
Publix has their signs and whatnot, but I've never been asked to mask up in any one I've gone into. That may have to do with my conservative area.
But I've also been asked to leave a Goodwill and a Vitamin Shoppe (both which I have done lots of business with in the past) for refusing to mask up. I've made a personal choice not to patronize them any longer, and go elsewhere.
In the beginning I used to get upset about it. Not any more. I don't have any more of a right to be in their store than they have to make medical decisions about my health. Agree to disagree and go your separate ways. Freedom be like that.
ETA: I totally understand your frustration though. There is a concerted effort to gaslight the entirety of the population on various themes concerning COVID. It's disgusting, evil, and reprehensible. But getting angry about it doesn't benefit you. When the TV is blaring full panic porn, I laugh. When an employer tries to strongarm, bribe, or guilt-trip everyone into taking the vaccine, I laugh. When people are outside or alone in their cars with cloth or surgical masks on, I laugh.
Know the facts, your rights, and options/alternatives. And when tiny totalitarians make themselves known, you'll laugh too.
