My family vacationed in Maine a lot as a child and I just found out we own a nice tract, 60 acres, of land near Dover-Foxcroft.

How likely is it I could could hunt it as a non-resident?  Are deer and bear the likely animals I would see?

Yo6 can buy a non resident license I think if youve taken an approved safety course.
Deer yes.
Bear possible but unlikely without bait, dogs, or guides.

It is your land... just get a non resident hunting license and you are good to go.

you can even constitutional carry as a non resident in Maine...
