I'm looking to start laying up cheese wheels over time, ideally 10 to 20 lbs each. Wisconsin being Wisconsin, are there any cheese makers that stand out as having a quality hard cheese at reasonable cost? I see some web options, but there's usually gems out there under the radar. Best value I've found so far is $8/lb for 22 lbs wheel.

Also, what kind of cheese? A lot of the smaller cheese factories specialize in certain types.
