Crawfish are fragile if trying to keep them alive for boiling. Must keep moist and very cool.
The season is winding down here in Louisiana. They are still available but the shells are
getting harder which makes them difficult to peel. Finally gets to a point that the demand/price
drops way down and the crawfishermen pick up their traps.
It's crawfish, not crayfish. I think crayfish are actually smaller crawfish used for bait.
