What can be used to keep a dovetail sight in place? I recently had one get knocked out of zero. I see people use red locktite to secure them, but everything I have read says it won't cure if oxygen is present

Loctite will cure over time, the other option would be using a center punch to raise a dimple or two in the base before inserting the sight, or just staking the sight in place, although this would mar the looks if it is a showpiece.

Not if you dimple it under the sight.  Don't do it on the edges, where the sight won't cover it.  Do it towards the middle where no one will ever see it unless the rear sight is removed.

Dimple the bottom of the slot near the middle.

If it still will not come up tight you can put a shim
under the sight to force it upwards tight into the dovetail cuts.
Remove the dimples if you add a shim.

Loctite will then lock the shim and the sight in place.
