Does it drain into the disposal? If so, maybe run the disposal and give it a bleach douche, too.

You have a small leak and that is mold from UNDERNEATH.  Check your drain line, and pull the whole thing out from under the cabinet if need be.

Most dishwashers have a filter in the bottom to catch stuff. It’s probably got bits of rotten food in it. Try cleaning it out.

Missed that covered in op.

Check the drain hose like mentioned and citrus cleaner in the disposal.

Drain should be air gapped. Meaning it has a higher point in the drain tube than where it enters the disposal/drain.

What detergent do you use? Do you use a pod in the compartment? What setting?

First I would try pitching the pod or detergent under the racks and running it on the heavy duty cycle.

Pull the filter and clean.

Fill a measuring cup with white vinegar, put in top rack, run at hottest settings.

Wipe the two front corners where the bottom of the door meets the inside of washer to remove the gunk that's built up.

You can put baking soda in it and run it again.

Check the drain line for gunk.  Replace if needed.

Clean your disposal and maybe pull your drain pipes under sink to clean them out.  You might have some nasty built up.

Years ago my buddy and I were looking for new dishwasher.
We went by a place that refurbished them. They hade a whole shelf filled with TANG.
I asked who drank so much. They told me they tossed a half-jar in a dishwasher and ran a cycle, and it made them look and smell brand new.

I use a single bleach tablet with mine.

I also open the door in the morning and allow everything to air dry all day.

Everyone knows that you have to pre-rinse your skunk apes before you put them in the dishwasher.

Otherwise there's all kinds of built up and stench left over.

Vinegar for the initial cleaning then 1/8 cup of bleach in the little door on the inside of the big door every wash.  Not going to use enough unless your washing dished 3+ times a week to hurt anything.

You can try replacing the drain line. What does the sink smell like?

Very possible the trap has something rotting in it.

I know fuck all about dishwashers and installed our Bosch one. Surprisingly you can get away without rinsing, but I know damn well that plastic drain line is going to collect shit and start to smell eventually. No clue why it isn't smooth and looks like an accordion, maybe for flexibility?

Is your drain line just sitting on the floor of the cabinet under the sink or do you have a high loop like you are supposed to?  Google it if you don't know what I am talking about, it's very easy and might be your problem.  Without the high loop, dirty water sits in the drain line.

Check real good for built up grease in the nooks and crannies of the filter.   I have to take my filter apart to get to it with a toothbrush. It’s usually not readily visible but when it starts to stink I know theres some hiding. Followed by a cycle with lemishine.

This. You’re likely getting sewer gas backing up when you run the dishwasher.

Most if not all sinks, toilets, dishwashers, etc... have a U Trap that uses the water to act as barrier for smells to not pass through the line to the drain.

BUT, it depends how the dishwashers discharge is plummed.

Once a month I run a bowl with 2 cups of white vinegar on the full pro wash cycle.
They also make cleaners you can use too.

If it can...you don't have a high loop.  The entire point of it is so that no water CAN sit in the line.  It should be run from the dishwasher to the sink drain in such a manner that it is impossible to hold water.

Run it empty a few times with extra soap. If it continues to smell, than worry about it. That's how I would proceed.

Not all of the water will get out of the line, unless the loop is below the dishwasher.

Mine line sits floor level, and has to go up into the loop. Unless it does a purge at the end, there will always be something left over.

If you have it looped up there but there is still line laying on the bottom of the cabinet, there is too much drain line, it needs to be shortened so that there is no possible way for it retain any water.

If the drain pump on the dishwasher is not currently shoveing water through the line, there should be zero water in the line.  It is not a trap, it should be dry.

I installed it a year ago, but I'm 99% sure the Bosch 500 dishwashers drain line starts at the bottom of the unit.  Unless the drain is in the floor it has to gain elevation at some point to connect to the U at the sink.

I have zero issues with smell at this point.

Again, there should be no "bottom" of the loop.  It should go from the high point of the loop directly down into the dishwasher connection.  The line should self drain.

You keep acting like it's ok that the line has water in it, it isn't and it is possible that it is your problem.  Upside, it's a super easy thing to rule out.
