If you buy French fries or hashbrowns they taste like potato but tots have a distinct taste. Why is that? Are they pre seasoned? I didn't remember seeing anything on the bag.  Anyone know?

Because they are small potatoes.

No idea what you're talking about but they're damn fine with some lawrys salt, cayenne, paprika, and cumin on them.

The size and shape of potato tots cause a concentration of positive ions affecting the taste. Tater Tots don’t have that problem.

And what promotes browning all over that drastically increased surface area?

That’s right. Corn starch.

I've noticed a lot of the formerly 2lb bags of frozen french fries have been reduced to 28oz or less, but the bags of tater tots still seem to be 32oz.

So at least there's that.
