I want to start with a 3.5" enclosure. I prefer USB-C, but it's not a hard requirement.

I've never really cared about brand, just form factor, and interfaces.  Whatever's on Newegg, usually.

Sabrent makes all sorts of enclosures and even docks if you want to use more than one HD.

Pretty much this.  Use whatever you get a good deal on, unless some specific need (ruggedized, etc) is a factor.

I went with this StarTech thing that's an enclosure and a drive bay. So it's the size of an external drive, but the bay pops open and you can put whatever you want in there without having to take the thing apart.
