I love trying various regional food specialty items--things you won't find but in a limited geographical area. I've lived in nine different states so have tried a lot of things. Most of them I really enjoy. Some examples:
Cincinnati chili--I know everyone like to bash this, but I love it, and there is nothing better to eat when intoxicated. I like the 3-way. Cornell chicken--the mainstay of the upstate NY summer fundraiser cookout. This vinegar/egg based marinaded bird is delicious when cooked over charcoal. Conecuh sausage--never tried this until I moved south, but damn if that's not the best sausage on the planet. Love it! And for my new submission: Danish Kringle--when I was growing up my grandparents lived in Racine, WI. When visiting during the holidays (or anytime really) there was always kringle available in the house. To this day I order by the 3-pack and the stuff gets scarfed down within hours. A link for you: O&H Danish Bakery Kringle Tell me about something delicious that I might not be aware of, and give me a way to buy it... ETA: states I've lived in-- Maryland, Georgia, Indiana, Ohio, Iowa, Wisconsin, New York, Washington, Minnesota. So you can get an idea of what I've tried. |

Pork steaks. A St. Louis staple on the barbeque. It's pork shoulder cooked on a grill and smoker with or without bbq sauce.

Garbage (or Trash) Plates... aka "Plates".
Gotta make the hot sauce yourself. Uh... it's boiled ground beef based. But you start with a base of homefries or french fries or tater tots, and mac salad, or baked beans, (though, I prefer all potatoes) add two burgers, two hot dogs (sliced in half long ways), italian sausage, or any combination of meats like that, and then you slather on a few scoops of hot sauce, add some chopped onions, and squirt on ketchup and mustard (or neither, if desired). Served with a couple pieces of bread to soak up the grease. Best eaten after drinking. This describes it pretty well. But, where I grew up in central NJ... Pork Roll was the shit. Slice it up, fry it up, and serve it on a breakfast sammich. It's heaven. Buy it here. Seriously. Do it. |

You were in Upstate NY and you didn’t mention Utica greens, chicken riggies or tomato pie? Salt potatoes, Hoffman’s hotdogs or Zwiegels red hots? No Buffalo wings? Basilio sausage?

Here in Ohio we have a sandwich called a cheeseburger. You form ground beef into a disc shape then grill it or fry it in a pan, add cheese and put it between a bun similar to what you'd find at any McDonald's fast food restaurant.

I travel around t the South a lot , and as you know we have the greatest food culture on earth.
Had some gumbo atDooky Chase few weeks ago. Not far form my house is Star Fish Co who operates their own fleet of fishing boats. Their fried mullet and hush puppies are ridiculously good. There are places all over the region I eat at every chance I get. Goose Feather cafe in Savannah for red velvet whoopie pies and croissant sandwiches. Shrimp & Grits at the Crystal Beer Parler The Nobel South downtown Mobile has killer jalapeno cornbread and catfish. I could go on for hours but it's making me hungry |

Brisket. Small place down the road, only open Saturdays, people lined up before the sun, pitmaster in her 80s, ranked top place in Texas a time or two. There's even a Netflix documentary about the place.

Golden Flake chips started in alabama. I think they suck but a lot of people like them. Fried green tomatoes are associated with Alabama but that's just from the book/movie being set here.

Lefse - Scandinavian version of a tortilla. Mashed Potatoes, butter, cream, flour. It’s rolled into a large thin circle and cooked on a special griddle. Most people fill it with butter & sugar and roll it up. It’s also really good with peanut butter & jelly. The stuff they sell in stores doesn’t compare to homemade.

Tri Tip
Season with this Grill over red oak coals. Charcoal or smoking is an acceptable alternative. Serve with grilled garlic bread, beans and a green salad. |

Mustard BBQ sauce. I haven’t had that exact recipe, but it looks about right. Great stuff on pulled or chopped smoked chicken and pork.
ETA-totally with you on Cincy Chili. Lived there as a kid and still love it. |
