I worked in a restaurant escargot were on the menu, open a can, cook them down with red wine, garlic, then put them into the shells top with herb butter and finish.

The owner's wife had the bright idea of saving money by harvesting the snails in her garden, she had them cooking on the range when I came in, the most ungodly smell in the world was permeating the kitchen.

She couldn't grasp that there was a difference from the ones we purchased canned in France from the ones crawling around her garden.

I have eaten them.  Tasted like slightly fishy butter & lots of garlic.

I prefer mussels or clams, if I’m headed down that legless branch of the food chain.

Did you know that if you are sleeping in a forest on the French/ German Border and snails get under your sleeping bag to get warm, in the morning you will crush them.

Snail is not easy to get off your sleeping bag.   I hate snails.

They also stink to high-hell when the start to rot.  I had some rather sizable snails in a pond.  On more than one occasion I had the misfortune of getting some of the putrid detritus on my skin.  I couldn't get the stench out of my skin the whole day whenever it happened.

All the time but i skip the premade shell bit.  99.9% of snails come out of a can.  If they are in shells they come out and into a can before being re-stuffed into shells. There was one guy in NY raising them fresh very small scale. I make them with ramp or wild chive butter and various curries sans shells.
