Short ribs are delicious. I like to cook them up like a ribeye or any other steak.
The way my local store cuts boneless short ribs is nice. They're like bricks of beef. Mostly flat on all sides, so very easy to cook evenly in a skillet. Yes, short ribs have a very high fat content (something like 75% of their caloric content is from fat). That's what makes them so delicious. |

The only thing that holds a candle to short ribs are ox tails. Short ribs are far easier to find on restaurant menus though.

I figured they'd cook up fine in the braising liquid. They did, but the flavor wasn't quite the same as if I would have cooked them down a bit. |
