Never been into reading so ive never gotten into all the canon of star wars.

I haven't read many, but Tales of The Bounty Hunters was a good one.  Also the Thrawn Trilogy and Darksaber.

I think the only Star Wars novels I've read were the original Star Wars hardback by George Lucas for the movie (still have it somewhere) and the "Splinter of the Mind's Eye" with Luke and Leia looking for some crystal.  That was back when I was a young'n.

the Boba Fett series is good. I've read almost all of the EU books that take place chronologically between Epi 3 and Luke and Mara Jade's wedding. Multiple times. The Han Solo trilogy (not the one written almost 40 years ago) is good, and you can tell it somewhat influenced the Solo movie. The Jedi Academy series is okay, and so is the Corellian series. The books before the Thrawn trilogy are good, Truce at Bakura, the Courtship of Princess Leia.

If you come across one in this chronological time frame and have questions, lemme know. There are definitely some good ones, but some stinkers too.

The Thrawn Trilogy was outstanding. As others have said, the Black Fleet Crisis trilogy and the X-Wing series are excellent. I remember enjoying I, Jedi as well, but it's been a long time. I'll have to look at my library tomorrow. I have fifty something different Star Wars novels from before Disney shit canned the Extended Universe and and started pumping out pure trash.

More of a YA read, but I think it nails Ahsoka’s character and builds off of Seasons 5-7 of TCW, leading towards how she is in Rebels.

Shadows of the empire is a must.
Legacy of the force series. This is where some of the ideas for the new movies came from, but a lot better than the new movies.
Fate of the Jedi series is also a good one.

Splinter of the Mind's Eye, already mentioned earlier is a good read.
The first expanded universe novel, I think it came out in 1978.

The Republic Commando series and the Darth Bane trilogy are probably my favorites. Old Republic era anything is my absolute favorite setting, so I typically enjoy anything from that era, such as Tales of the Jedi/Dawn of the Jedi.

Not books, but still cool: KOTOR 1 and 2. For kotor 2, get TLSRCM, it re-adds a huge swathe of missing content along with bugfixes.

2 by Michael Stover who writes the viciously violent Caine series(also recommended)
Shatterpoint about Mace Windu and Traitor about Jacen Skywalker.
Traitor is interesting because it thoroughly deconstructs all the contradictory nonsense in the Jedi code and philosophy vis a vis the Dark Side.
