Dinner pic!

I’m especially happy with the stuffed baby Bella’s topped with a thin sliver of jalapeño and a pinch of cheddar, and this is one of the tastiest NY Strips I’ve had in some time

There’s a 12ga Brenneke and a .223 Wolf ready to load. I act as my own plate carrier and I haven’t used a chainsaw or a stapler since the 90’s

Strip steaks are great for sous vide or reverse sear.  Just need to get that pan a little hotter next time maybe.

I think it is just the pic making it look dry - jus ran to the right and is puddled under the mushrooms.

Looks good - I like the sound of the mushroom stuffing.

The steak wasn’t dry- I made the first few slices on a cutting board before plating it up. The mushrooms were absolutely the star of the show though- stuffed with diced mushrooms, sautéed onions, a touch of rice and some shredded mozzarella. Topping them with the jalapeño and cheddar definitely took them to the next level!

My go to is equal parts of the sliced stems, shallots, pine nuts, panko, & parm. I put a little Italian dressing on the gills and in the stuffing, then moisten the stuffing the rest of the way with EVO. They are a huge hit.

Sear was probably because the surface was too wet, not the pan necessarily.

When I bake bacon I sprinkle it with some cayenne powder and then save the fat and use it to sauté other food like veggies or omelettes ir whatever else…  The cayenne takes bacon to the next level!
