Been there done that.
My house, my food, my set time to eat. 12, 2, 4, whatever, get there on time.

At least you know your plans for next year.  Hopefully chilling in a beach or a cruise ship or some other place with no stress on your wife and yourself.

Yes that is BS if they agreed to attend your way too early thanksgiving dinner.

What I would have done is say “thank you for the invite but we won’t be attending your ill planned lunchtime t-day dinner.”

Then nobody will be buthurt  and you guys can have your high noon, low attendance dinner with no late attendees. Lol

We had just the opposite happen to us a few years back. We were told to be there at my parents at 4:00. We planned on doing so. At 2:30 we get a call from our niece "Hey, we are about to sit down and eat, where are you guys?" I said "We were told to be there at 4! What do you mean you're sitting down to eat now. We are in the middle of something and cant be there RFN!" She said "OK then we are going to eat then and you can eat when you get here" I said "Fuck it then. Have a good time... we're not coming"

No big deal. My favorite uncle and the adventurer of the family would always be the last one to show up, never on time, usually two hours late with a half filled bottle of whatever he was currently drinking, and my grandmother would fix him a plate.

I tell everyone to be ready at 12 but make sure the turkey is not even done until 1230. My the time its carved and ready to serve its 1pm.

Nobody has caught on yet to the fact the turkey is always "taking longer to cook than I thought".

You should of referred your wife to us.  We would have told her that noon is way too early for Thanksgiving.  It is harder for people to get to your house and harder for her to get everything ready in time.  Most everyone knows this.

I believe at noon it's called lunch. And, yes, it's OK to have Thanksgiving at noon. We used to do it all the time. Not this year, however. This year, it's at 4:00 because.....reasons I won't go into.

And in this family, if you aren't there at the agreed-upon time, then everyone else starts eating and you'll just have to try and catch up. We don't wait. Too bad, so sad. Some may say that's an asshole thing to do. But I think the asshole thing to do is NOT be there at the time you were told to be there (emergencies and other unforeseen circumstances notwithstanding).

Eat from around 1-3. Cleanup and portioning out leftovers is from about 3-4.  Around 4 I start a fire to make some good coals for the cast iron deserts.

We usually have a bonfire and dessert around 6pm.

Our big family always did 12-1pm

It was too early for my household so we stopped going.  Whoever hosts sets the rules. I dont dont see a problem either way.  When the meal is ready, serve whoever is there, put away leftovers and go about the day.

If nobody showed up, I'm going for a drive or visiting friends.

Eat, clean up, and put the leftovers away.
When they show up, point to the kitchen, they should be able to figure out what to do next.

The first one to make a stupid fucking remark can be pointed to the door.

Most importantly, don’t ask them anything regarding them being late.  Let them bring it up, then remind them of the correct meal time.

I’d be pissed too.

ETA:

My in-laws have a one hour meal time window to allow for issues, be at their place around noon, meal time will start around 1:00-2:00.
I do the same when hosting holiday meals.

You’re probably right but there’s are two reason I don’t have issues with my family

1. If I don’t want you around you’re not around and I don’t think about you
2. If you are around I’m not going to get worked up about little things

11:30 - 1:00 acceptable start time for lunch

1:30 - 4:30 is not when to start a meal

5:00-5:30 happy hour starts, early dinner

5:30-7:00 acceptable start time for dinner

Starting lunch at 2:00 - Hell no.

IIRC, the mid-day meal thing was a farm tradition in some areas. Farm workers probably had 6+ hours in already at noon and another 6 to go.
