Somehow you know the encounters he'll/you'll face.

He had a sawn off barrel and sawn off stock Winchester M1897.

What single type of civilian available modern 12 gauge shell do you choose to carry?

Some manner of slug. Would have turned the flesh wound he gave Chigur into a broken femur. He would not have been much trouble after that.

ETA: I would have kept the pistola and SP89 (impossible gun in the movie time line) as well.

While I'm certain that you are speaking from a tremendous amount of "personal" experience, I've shot hundreds of them mostly through my KSG and haven't had any trouble. I'll take the extra capacity of having 35 of these little bastards and you can do as you please.

They only work in certain action types without a feed device. Won’t work in 870s, won’t work in Mossbergs without a mini clip. Will work in Winchester 1200/1300 but with some issues....

I've never owned a Remington and with their recent headlines don't expect that to ever change but here's a video of me from a few years ago and it demonstrates why I'm content to stick with the minis.

Winner Winner Chicken Dinner.

Great "All Around" Defense load in 12 gauge.

Deep Penetration against psycho hit men from hell, a good number of pellets and a "standard" load (none of that silly 3" magnum stuff)

That Federal Flight Control #00 would also be an excellent choice.   I stay away from #4 (too small for good deep penetration to the vital parts).

You’ve already failed the “which gun” decision, why overthink the ammo?

Just load up some flavor of 00 buck and lament your lack of a rifle.
