Fermentation produces alcohol and carbon dioxide, amongst other things. But those are the big two.
If you understand your fermentation curves well, near the end of fermentation, you can seal the vessel it is in and capture that C°2 enough to carbonate the beer. You can also make a bomb, so that one isn't for the beginner. If you do not seal the vessel until fermentation is concluded, then yes, aside from an insignificant amount of carbonation that may be hanging out in solution, the beer will be flat and you will need to add carbonation either through package priming or injection. |

For the home brewer, you generally have to carbonate it by adding small amount of corn sugar when you bottle to kick off a secondary fermentation that will produce enough CO2 in the bottle to properly carbonate your beer.
There's online calculators to figure out the proper amount to add based on style, gravity, ect. Too much will give you bottle bombs. If you keg you can just let it sit on gas for a time or force it under higher pressure. Of course you can naturally carbonate kegs with corn sugar if you wish. It's just a big bottle with that respect. |
