Ingredients
30 oz hashbrowns
16 oz breakfast sausage
1/4 cup diced onion
6 eggs
12 oz shredded cheese
1 bunch green onion (garnish)
Season to preference/taste

Fry the hash browns and season to taste. Set aside in a mixing bowl
Fry the sausage and break up to small chunks. While the sausage is frying beat
6 large eggs. Preheat your oven to 350.

Once the sausage is browned, strain the excess fat and stir into the bowl with the hashbrowns. Immediately stir in 8 oz of cheese with the sausage/hashbrown mix.

Once stirred spread evenly in a 10x12 foil pan, and pour the eggs over the mix, covering all the mixture. Cover the pan with foil and bake for 25 minutes.

Remove the foil, sprinkle the last 4 oz of cheese on top, re-cover and bake for 5 more minutes. Uncover and let stand for a couple of minutes. Sprinkle some sliced green onion ends (dark green leaves!) on for garnish.

It also reheats well. We meal prep for breakfasts all the time. The meat can vary to whatever you want. I use brisket quite a bit.

I don't understand the need to put it all in a casserole...

Biscuits and Gravy needs nothing else.  Put it on a plate and eat it.

Yep. I’d just rather have real biscuits and gravy (the greatest of breakfast foods). Needs to be homemade gravy, too. Instant gravy mix is .

And... we're off!

I added some leftover shredded potatoes to the biscuits I pressed flat as a crust. Some freshly shredded Colby jack cheese on top of that, and then gravy, eggs and into the oven.

I'm thinking I should have fried the potatoes 1st but we will see.

I made this for breakfast this morning, and stashed some in the freezer for later.
I used 5 biscuits, 3/4 lb. sausage, 1/3 C milk, > 1 C colby-jack grated off the block, and 4 eggs.  Cooked it in a souffle dish.


I had the oven set to 350° for 40 minutes.  Unfortunately, I had a momentary power outage, and forgot the timer stopped.  The oven was still cooking, and when I guessed at the 40 minutes the biscuits weren't done, but it looked damn good otherwise!




I ended up cooking it another 20 minutes, and it was perfect.  I think maybe being so thick it needed closer to an hour anyway...





All that delicious, heart-stopping gravy...





Was it good?  It was 'clean plate club' delicious!

This has been a "Breakfast for Dinner" staple here for some time..  She also adds shredded cheese.   It's got a lot of carbs so I have to make sure it's a day I can do a hard workout and then get some sleep.. but it's fantastic.  It actually sounds kinda good right now.

I made this for a potluck breakfast. It went over real well. I used two pounds of sausage instead of just one and made the gravy from a roux. Thank you for the recipe. It is a keeper.

Split the difference - use Pillsbury Grands bagged frozen biscuits. I’ll never make another biscuit as long as I live if these are available.
