I like the thwack of the 31, but like the pivot and floating stop pin on the Inkosi. Think the action is smoother also. Kinda thinking of a quality knife for clip less carry in the keys pocket to use all the time and get some brutal, honest wear. Dam fine knife line up too! |

Took the afternoon off from my day job. Micarta tuff lite scales getting some more progress. First set of micarta run though the full process. I’m going to cut the lanyard slot in these to see how that looks and then will be ready to start batching them all out. I’m going to omit the internal milling on the ones I make to send out, it makes a terrible fuzzy mess in micarta. I’ll continue to do it for aluminum and G10. Attached File |

Yep, the pins above the pivot and near the lock are part of the locking mechanism. Forward pin is the stop pin that the lock wedges the blade tang against and the pin in the middle of the spine is the pivot for the lock bar. Those parts are all retained from the OEM knife along with the pivot bushing and lock bar spring. The parts that I'm making are the scales, backspacers, standoffs, and bronze washers. That line up is all Idaho. I have some more Idaho knives in various places. I do not recall any issue with lockbar cutout digging into my finger. With the size I guess I don't normally hold it in a way that It would do that. I will have to go hold it now and play with it. I am at a point where I have been just throwing knives in my pocket even if they have clips so I don't scratch doorways and cars etc. The small inkosi is a good size for that. |

I didn't know Chef Knives To Go was a pretty local business. They're practically in Madison. I also don't know why I waited so long to upgrade kitchen knives. For something that's going to get used several times a week this should have been done a long time ago. I have some nice kitchen knives. I also have a set from Ikea. As the squirell noted, even if I know how to treat them, others don't, and I can't educate them all. Whenever we have a new babysitter/visitor/whatever, I try to educate. I explain here are the nice knives, they are great. But you have to use them correctly to keep them great and promptly clean them, don't leave them sitting in the sink with the rest of the dishes. Or you can just use the Ikea knives. Guess which knives they inevitably pick. |

I should probably start telling everyone else to use the old set we have to save myself from the eye twitch I get any time I see a 1084/1095/52100 knife left in the sink in water or with chunks of whatever dried on it, or when I put a fresh 6000 grit edge on a really thin knife, then find my wife cutting the spine out of a chicken with it![]() I make myself feel better by thinking that these things help me learn what the knifes and materials are capable of. lol |

Perhaps the real issue is we have useable art and not everyone appreciates the art aspect. When we were at a sushi restaurant recently a chef was coming in for his shift and he had a bag for his gear like a mechanic with his own tools. Pulls out his apron etc, and then a knife roll (I think it was actually knivestogo), unfurled it and started carefully placing them around his station in the known pattern for which he would need them. I reflected on that for a while thinking here is someone who appreciates the ceremony of his craft, who pays attention to the details, who feels joy in the process and understands his tools are integral in what he is doing and he is not settling for the beat up communal Dexter knife (which is functional if not pretty) because his choice of tool helps make him be a better version of himself. Or something like that. |
