I soak them 24 hours in orange juice and lemon juice before smoking.
I do 3-2-1
3 in smoker at 225
2 in foil with apple juice (smoker)
1 back in smoker at 225..

The last hour you can put sauce on them if you want.  I use dry rub on mine.

Are short ribs good with a regular dry rub? I just about have my rub recipe the way I want it, but is it as good on beef as pork ribs?

Not bad.  

I'm a pork guy, but I do appreciate a good beef rib.   NO ONE anywhere close to here does it right.

My advice is kosher salt and fresh cracked pepper, but any rub that works with beef would be OK.

On beef, simplicity is king. You'd never put more than salt and pepper on a steak and this is no different. There's no need to cover up the flavor of the beef with a bunch of flavors.
 

Thanks. Okay, what about chicken?

I put the same rub on chicken that I do on pork, and it's just as good.

Chicken and pork are the sluts of the smoking world. Rub, marinade whatever you want on them. They'll willingly take it and be better off for it.
