Got 5 does this year. 2 in PA and 3 in AR.

Still have late winter big animal hunt to go. Toss up between another Nilgai hunt in South Texas or maybe a cow elk hunt somewhere in Texas.

Am heavily leaning toward nilgai

Dad seen a 10pt and 4pt. Brother seen a doe walking in.

I'd never even heard of it before you guys mentioned canning venison.  We always just had it processed and froze it.  Would love to hear your canning recipes and how you go about it.  Assuming you don't cook it after?  Kinda like open the can and eat it?  I'm admittedly ignorant in this respect.

Nice, I love canned venison. I gave my buddy who owns the land a whole deer since he’s raising a baby and can’t hunt and he have me back a ton of canned meat. So good.

Cold pack raw, add some water and a bouillon cube or whatever seasoning you like, and use a pressure canner. The canning process will cook it and then yes, you could eat from the can, or add it to anything that calls for cooked meat. Throw it on a sandwich, stroganoff, in stew, chili, fajitas… whatever and it’s ready to go and super tender

Awesome thread!

I didn't get to hunt this year because I snapped my Achilles tendon in October.

Luckily, I shot 4 deer last year so I'm not out of meat yet. Went freezer diving today and pulled out a bunch of ven shanks. A lot of guys either scrap them or throw them in the grind pile, but they're one of my absolute favorite cuts.
Browned, then braised them in a dutch oven (along with a bunch of other stuff) for several hours until they were falling apart. Buttery and delicious. Minimal chewing required. Made a sauce/gravy from the braising liquid, and served with roasted carrots and mashed reds.

I had a good season.  There’s so much poaching that goes on around me that anytime you get a decent buck it’s something to be proud of.  I missed this guy during bow season.  He came back during muzzleloader.

Got a decent 10 pointer.  Son took a button buck.  He helped me process the deer this year.  He's pretty smart and figured it out with minimal instruction.  Today we're smoking 25 lbs of honey bbq snack sticks.

@R3L04D

Nilgai would be free range on farmland in South Texas. The farmers down there hate them more than they hate feral pigs.

Cow elk would be a high fence “ shooting for groceries” type of thing.

Shot a nice doe yesterday morning. Me and the boy went out in the afternoon and he shot another nice doe that was apparently being followed by a monster, atleast 180. I grabbed the gun from him but it was jammed, fucking Bear Creek strikes again. Same thing happened last year with a monster so I ordered specific mags this year but never tried them out. The thing is a tack driver so I’m gonna try to get them to fix it after the seasons up. Love me some 450 bushmaster in Iowa.

Gonna Webber some belly loins tonight after hunting. Kinda bummed the heart got blended bout my favorite part.

Check your gas port size. They advertise a .085" gas port. Mine was two sizes smaller than that. After opening the port up one size(you can always drill again) it runs great.

Yep, you can eat it right out of the jar if you so inclined. I usually put it in a small pot with some BBQ sauce and heat it up. Works with a bun or tortilla or chips.

Anyone want a pair of Scentlok XL gloves? I needed them in a pinch and they're too big, worn once, never sweat in, basically brand new.

I'm doing this partially because it is the holidays and I know even the smallest things can sometimes make a big impact; please don't ask for these if you don't need them.

Hunted six days this season. Saw a dozen deer. Passed up a couple shots, and took this 140 pound doe on my property.
Still plenty season left, but I usually only take one deer a year for my family.

For the past thirty plus years, I've had my deer commercially butchered and packed. Most it has ever cost was eighty dollars.
This year, the same place charged a hundred seventy-five.
I'll probably start processing my harvest next season.

Squirrel hunting is my “guilty” pleasure. I hunt more than most folks, for everything that Kansas has to offer. I stress out about shooting a big buck, etc. Squirrel hunting is my time to relax. If I miss one, who cares? I’m just out enjoying myself in the woods.

Was reluctant to use match bullets but they had good kill reviews on line. She fell straight down with double lung and heart.

Squirrel skin and wild turkey legs are the toughest stuff in the world. It's a pity they can't build tires from them.

(In all seriousness my grandpa's grandpa used to make shoelaces from squirrel hide)

So, when we have younger, immature squirrels, we'll pan-fry them. Older ones get turned into some sort of stew or dumplings (boil squirrel, remove meat from bone, substitute for your favorite chicken&dumpling recipe).

My kids LOVE squirrel stew/dumplings/soup. Somewhere I have a video of them begging me to kill more squirrels because the stew was so good. It was really just sort of a stewed squirrel and rice soup we threw together.

At the moment I have one younger squirrel and five very old/tough ones in the freezer. Looks like stew will be on the menu soon.
