I've got two shotguns; a Mossberg 500 or 590 Persuader (no idea how to tell the difference; it's got an 8 shot tube and a bayonet lug/heat shield on it) and an old Browning A5. I should probably pick up an actual stock or folding stock kit for the pump gun as it's really close to the only NY-legal firearm I own, and I use it for my trunk gun when I drive out that way...but otherwise, I've never even shot it.

How fast does a .224 bullet have to go to make a deers head look like that .gif?

You think a 64 gr loaded over 24.5 grs of IMR 4985 will do the trick or should I borrow a .22-250? (or is it a 25-06? I can't remember)

Both will 22-250 and 22-06 will burn barrels fast. But a 5.56 should do it depending on placement plus bullets do weird shit when they hit something.

The 22-250 or 25-06 (whatever it is) belongs to my grandfather and probably has 50 rounds through it, in the 10 years he's owned it. He won it for having the biggest buck on his lease that year. I feel bad for him, he loved to deer hunt but due to almost kicking the bucket a couple of time over the last 4 years, he is unable to get out of bed and go. It broke my heart to hear him talk about getting out of that bed to go hunting and knowing he probably never will.

That sucks I'm glad my grandfather is still in good health still goes shooting every weekend and builds 1911s.  Has enough shrapnel in him to set off metal detectors though.

Sort of what I am leaning towards.

But that means the nuclear option, and nothing good is going to come to it, but it still may need to happen.
