This.

I make a blender Hollandaise.

2 egg yolks
1 Tbsp of lemon juice
1 Tbsp of warm water
1/4 tsp coarse salt (if using unsalted butter, skip otherwise)

Combine the above in a blender and blend on low until froth. Meanwhile melt a stick (1/4 cup) of butter in the microwave until just below boiling.

Once butter is clearly melted, start blender back up on low and add butter to blender through lid port in a slow trickle. You will hear the blender start to bog as it thickens. Blend until thoroughly mixed and serve over anything you can think of. Steamed veggies, bratwurst, fish, over easy eggs, whatever.

except that anyone that makes it from a mix should be flogged

never understood the irrational fear of hollandaise... it's easy as hell to make (even the traditional way) - I don't think I've had one break or scramble on me since I was in middle school

I'll sheepishly admit that many years ago I used to use that powdered packet stuff.... 
It's just like packaged gravy mix, until you find out how the real stuff is supposed to taste when it's properly made from scratch you are clueless...
That powdered packaged Hollandaise sauce mix is even worse than the packaged gravy mix, it doesn't taste like or have the velvety consistency of "real" Hollandaise at all!

I have salmon benny almost every Sunday for brunch. They also do crab, gyro, rib eye, lobster, duck, and traditional.

You can easily make Bearnaise if you know how to make Hollandaise.

It uses tarragon, vinegar, and some shallot for flavor.

Goes well on red meat.


Making it a blender (search for "blender Hollandaise" and the method will come up.

It works all the time every time and saves all the manual whipping with a whisk.

Hollandaise is kind of like mayo. Only made with butter instead of oil, Lemon instead of vinagar and a pinch of cayenne. It's good on almost anything, including fries.
