Is it real complicated to cut and thread a barrel while it’s still in the receiver and open the port up? I can’t decide if I should just pick the other caliber pistols up, or grab the rifles and go this cut and thread route down the line. Really wish the barrels were like 10” or 11”.

I haven't done an ACE. I have a SIG 556 Patrol that I SBR'd. It went from 16" to 10" and then wouldn't work reliably on either regular or adverse settings. I had a gunsmith enlarge the gas port holes on the plug and it runs like a top now. I know it isn't the same gun but the 556 is also an AK type operating system.
I would be interested in cutting down my 16" 5.56 ACE enough that the suppressor mount could be pinned and welded and get back to 16". That wouldn't be much of a change though. I just find most 16" rifles to feel overlong with suppressors on the end.

It is not easy to turn and thread a barrel on the receiver- not impossible, but the vast majority of shops would pull the barrel to do the work. You are also going to have to press off the front sight base to adjust the gas port (if adjustment is necessary).
Best bet is to send it to Jeff at Hillbilly Firearms and have him cut it down and thread it to the length you want. He is the galil expert and will adjust the gas port as part of the process as needed, unless the shop is particularly daring and/or skilled.
