Have 35 inch tires purchased but need a min 6" lift to fit them.

6 may rub slightly.  8 will clear no problem.

And truck does leave pavement, got high centered on the frame once last year.

It takes that much lift to fit 35" inch tires on a chevy? Damn. I drove around with 35's on my jeep for a week , no lift, and only rubbed a little on the pointless air dam under the front of the bumper. As to your question, I'd go 6.

ETA ...and trim fender liners and such accordingly.

Well that's because Chevy has square wheel wells unlike other manufacturers.

What does it rub?  I'm on 33's in a tundra with taller struts up front (not even leveled).  A trim of the skid plate was all that was needed.  I'm surprised you need 8" to clear 35's.

Yep. I have 285's that are somewhere in that neighborhood, and they'll rub when I turn sharp.

I'd like to do a 4 or 6, but never feel like I have the money to spend on that kind of stuff.

I've had both a 6" and an 8" on a 2500HD Silverado, I preferred the 6".  You can fit the tires with some minor cutting at the most.

Wheel offset plays a substantially bigger role in fitting tires than tire height does.

i did a 4" lift and cut the fenders to fit 37" tires.  Cause if your lift is too big you'll need new drive shafts and/or drop the t-case a couple inches.
