Has anyone in Greenville area had a Glock grip reduction done on a Gen 3 Glock by any of the local gun smiths?

I searched around but couldn't find what I wanted so I sent mine off to GlockWorx in California. Took about 45 days turn around time I think.

Did they fill in the backstrap channel with some sort of epoxy or polymer filler?

Not on mine, but they do have that as an option of you really want to slim it down or create a channel to help direct the mag into the magwell. Just wasn't high on my list of priorities.
